Whether you need a light, refreshing side to pair with a rich, saucy protein or want to make use of some extra veg in your fridge, we guarantee this Quick Pickle Cucumber 7 Radish Salad will become a staple in your culinary repertoire.



Quick Pickle Salad

4 Persian cucumbers

1 bunch of radish

3/4 cup of rice wine vinegar

1/2 cup of cold water

4 tablespoons of sugar

Slice the cucumbers and radish as pictured. In a large bowl, combine vinegar, water and sugar. Mix until the sugar is dissolved. Add cucumbers and radish to the bowl. Vegetables should be fully submerged. If they’re not, add vinegar / water / sugar in same proportion. Set aside for at least an hour. Serve as a side or nosh on its own.
